| SALADS | In
the summer add herbs to a basic salad, if you find the taste rather strong
at first add just a few leaves and gradually increase as your taste buds
get used to the flavours. Over a period of three years I have increased
my intake of herb salads and now find the bitterness of some quite palatable,
it is worth perservering. |

| INFUSIONS | ||
| TEA | General Information | Many
bought herbal teas suggest you steep for between 3 and 5 mins, this can
be too long with your tea becoming cold. If your tea tastes disgusting it
probably means it does not need as long to steep, 1 to 2 mins is enough.
With trying new recipes allow for a few testings before you reach the desired
flavour. Never drink the same potion to excess, always vary what you drink
and be aware of the qualities of the herbs you are using. Therefore if one
particular herb is a strong diuretic be aware that this is causing all those
extra trips to the loo and maybe you should cut down the number of cups
or the potency (is it too concentrated), that you are drinking. |
| Standard | Before
you start to make your own teas check on the relevant herb page to make
sure the quantities of leaves are not different to this standard brew. Release the juices from your herb leaves and flowers by snipping them into small pieces or breaking them up. Use 1oz of dried herbs or 3oz of fresh to 1 pint of water, unless otherwise specified. Warm the pot. Place in a china or glass teapot and pour boiling water over them and steep for 4 mins. If you are only making a cup of tea, use one teaspoonful of herbs. |

| Iced | Follow
as above and then cover and place in the fridge. |

| Seed | Before
you start to make your own teas check on the relevant herb page to make
sure the quantities of seeds are not different. Boil 1 pint of water and place 1 tablespoon of crushed seeds, simmer for 5 mins and drink hot. |

| Butter | Chop up your favourite herbs finely and add to some butter. Spread on french bread and bake in the oven or toast to make 'Herb Bread' or add to soups and stews to enhance the flavour. | |
